Spicy mushroom hummus calzone

This is a great dinner, so tasty with the creamy hummus which also adds great moisture, savoury mushrooms and with an added kick of heat from the chilli flakes, you can of course leave them out if you don’t like chilli.

By using wholemeal spelt flour and adding a side salad you’re cramming in some lovely nutrition as you tuck into a lovely, hearty, filling plate of deliciousness!
Proper healthy comfort food is what this is.

Juicy summer squash & pomegranate rainbow salad

Minimal dishes required for this recipe AND it’s highly nutritious.

Normally I don’t make salads, they don’t interest me at all so even though I’m quite a healthy eater I just don’t eat them that much however, this salad is perfect for summer as the pomegranate seeds pop, giving a lovely juicy burst of flavour to the salad and the cheese balances out the acidic taste of the rocket. Perfect for the warmer weather, easy to make and it packs in so many good foods with bright colours and nutrition!

10min creamy pesto + high protein black bean noodles

High in protein, fibre, green goodness, low in sugar with no refined nasties & made in under 10min!
This is a nutritional powerhouse of a meal. Each 50g of black bean noodles has 22g protein, 10g fibre and approx. 30% RDI iron (the absorption of which is boosted by the Vit C from the other ingredients) with only 7.5g carbs, that’s a seriously good nutritional “pasta” meal and that’s not even mentioning the nutritional goodness you get from the avocado, basil, peas and garlic! Plus this is 2/5 a day (3 if you use more noodles), you can’t get much better than that!

15min boost bowl

This dinner can be made in under 15min, is well balanced, nutritious, 2/5 a day and all you need to give you a little boost after a hard day!
For those who may need more protein & are meat eaters, feel free to add some fried turkey mince etc.
I love this combo as you get all your macros: carbs from sweet potato, protein from beans/lentils and good fat from the hummus, plus the fat helps the vitamin A absorption from the potato and it’s packed with lots of fibre too!

Garlic parsnip chips with a chilli lime mayo

This was another one of those dishes that I thought would taste just nice and actually then tasted far more amazing than expected which left me regretting I didn’t make a bigger batch.
Super easy to make and helps you get another veg into your day, plus it’s a nice change from the usual white or sweet potato chips and is lower in the carbs so I don’t feel guilty about the mayo, woohoo!
Other benefits to eating more parsnips include the nutritional bonus of fibre (keeps you full even though they’re not high in calories), potassium (great for heart & BP), manganese and vitamins K and C.

Chocolate calzone with homemade “nutella” filling

I couldn’t wait to use my homemade hazelnut butter in this recipe as so much effort went into making it, my poor little blender can only do nut butters bit by bit and takes half a day, so I certainly wasn’t going to let it go to waste!

This recipe is healthier than you may first think, it contains cacao powder which is full of antioxidants, is sweetened only with a little maple syrup, is filled with nutritious hazelnut butter which is also high in good fats and vitamin E & is made with wholegrain spelt flour which won’t spike energy levels the way refined white flour will.
