This super healthy, high fiber matcha banana bread with dark chocolate chunks takes a normal banana bread to the next level with a health boost!
Matcha is green tea powder which some people may not be a fan of normally but it’s so good for you so sneaking it in where you can is highly beneficial. For an overview of matcha/green tea benefits see my old post here.
I have also added some plant protein to my version to balance out the macros but you can also stick to wholemeal flour if you prefer. I absolutely loved making this recipe multiple times over the past few weeks as when I do, I have breakfast sorted for a 3 days and it’s lovely slathered in peanut butter!

These clean, plant based protein bars are a lovely little way to boost your protein intake and easy to make with wholefood, real ingredients and using protein powders that you like and trust. I personally won’t use ones with added sucralose etc and most protein bars also have a horrendous list of ingredients or lots of prebiotics that not everyone can tolerate well so you’ve no choice really but to make your own.
I used a vanilla flavour plant protein powder and hazelnuts for flavour but these are easy to adjust to whatever taste you like so feel free to play about with your bars.

Oats have a rep for being boring but not mine!
I played around with different plant protein flavours and fruit to make my baked oats more fun and also balanced with the cashew frosting which is so easy to make & adds healthy fats to balance out the carbs in the oats and protein for a well balanced breakfast. You can even use this as a treat and make it sweeter, plus the sweetness comes from natural sources that also contain fiber.

I’ve wanted to make a good, sugar free frosting for cakes for a while now, I have finally nailed one I’m happy with. This rich, peanut butter chocolate frosting is amazing, creamy and still indulgent even though it’s refined sugar free!
I love adding this to my cakes and it’s enough for 5/6 slices depending on size. I also tested this on other people & they loved it!

I know banana bread was all the rage during lockdown and it always is because we very often have ripe bananas to use up in a short period of time so I did just that but put my own healthy twist on this one & also added some cacao powder for chocolate hit but is still healthy enough to have for breakfast!
This can also be gluten free by using GF flour and also vegan too! You can adjust the sweetness but I like to keep it low, letting the ripe bananas do most of the work here.
