These homemade, vegan, protein bars are so yummy plus do not contain weird sweeteners like Maltitol that can give you an upset tummy and are way easier & cheaper to make compared to buying expensive store bought bars!
I used a berry & PB combo flavour here but they can be easily adapted to suit your tastes.
I used plant protein, mostly pea based & whey will not work so if you’re not plant based please don’t sub this as it won’t work!
Recipe (makes 3/4 bars)
-30g peanut butter
-1 Tbpsn maple/date syrup/honey
-30ml water or milk of choice
-120g plant yogurt I used Coconut Collab
-50g plant protein
-30g oat flour (just oats ground up to a powder)
optional: heaped tsp berry powder etc
Topping
-25g melted dark choc (I used Ombar) + 1 to 2 tsp neutral oil for a smoother texture or omit if you like the chocolate firmer
Directions
-Simply melt the wet ingredients (except the yogurt) together then mix it with the yogurt in a bowl and add the dry ingredients & mix well as it’ll be thick!
Press into a lined tin and set in the fridge to firm up for a few hours at least, the longer you leave it the firmer they’ll be & easier to hold. Melt the choc and drizzle this on top & leave to set before slicing or do this bit before you first refrigerate them.
