I know banana bread was all the rage during lockdown and it always is because we very often have ripe bananas to use up in a short period of time so I did just that but put my own healthy twist on this one & also added some cacao powder for chocolate hit but is still healthy enough to have for breakfast!
This can also be gluten free by using GF flour and also vegan too! You can adjust the sweetness but I like to keep it low, letting the ripe bananas do most of the work here.
Recipe
-2 large ripe bananas
-half a ripe avocado (sub for 1 egg or chia egg)
-1 egg (or chia egg if vegan)
-60ml water/milk of choice
-7g cacao powder
-1 Tbsp coconut sugar
-35g plant protein powder (sub with flour if preferred)
-80g oat flour or wholemeal flour
-1 tsp baking powder
optional: chopped dark choc, 1/2 tsp cinnamon, berries for the top
Directions
Pre-heat the oven to 180c fan
Mix the dry ingredient then add the banana, avocado, egg & milk to a blender & blend until smooth
Add the wet mix to the dry and stir
Pour into a lined tin and top with berries/chopped banana if desired
Bake for 22-25mins
I like to serve mine with some nut butter!
