OMG this is the best salad I’ve ever made!
Super tasty, super easy and you only need to use 1 bowl (besides your serving plates) meaning minimal washing up, yay!
I highly encourage you to do the simple sweet chilli sauce yourself, rather than buying one from the store as they’re full of refined sugar, this one however uses only 1 tablespoon of honey for 2 servings yet still has lots of flavour.

I love this recipe because of how the blueberries cook slightly from the heat of the pan and go all juicy when you bite into them, delicious! Plus it looks so pretty too, that lovely deep purple colour.
This is a great morning breakfast booster as it has fibre, protein, good carbs and some matcha (green tea powder) which will help perk you up but without any jitteriness. Aim for a
good quality matcha.

I loved how this recipe turned out so much that I ate it so fast I nearly choked!
A great way to use up leftover cooked squash that doesn’t involve chucking it into a salad.

A paleo, grain free, low carb burger bun
As the bulk of the bun is made up of squash and coconut flour it’s much lower in carbs than the traditional version, although I do highly recommend pairing a good fat e.g. avocado or a sauce with the bun and burger as coconut flour (especially the de-fatted kind which I used) can be a little dry, but no less delicious! I adapted this recipe from This Morning when Gino cooked his version of a cottage pie. I used turkey mince as I’m not a fan of red meat and used pumpkin (you can use squash too) instead of sweet potato which makes it less stodgy and because I still had 2 entire pumpkins leftover from Halloween lol! But feel free to use sweet potato if you like or 50/50.

Super tasty with a chilli kick!✓
The chilli, ginger and salty flavours from the ingredients mix really well with the PB to give a spicy, sticky, tasty noodle meal. Definitely also a dish for when you’ve a cold and your nose is blocked up as the spice in this will clear it right out! Plus, getting chilli, garlic and ginger into your body regularly is great for the immune system!
