Minimal dishes required for this recipe AND it’s highly nutritious.

Normally I don’t make salads, they don’t interest me at all so even though I’m quite a healthy eater I just don’t eat them that much however, this salad is perfect for summer as the pomegranate seeds pop, giving a lovely juicy burst of flavour to the salad and the cheese balances out the acidic taste of the rocket. Perfect for the warmer weather, easy to make and it packs in so many good foods with bright colours and nutrition!

Eat a rainbow juicy summer salad

Recipe (serves 1)
120g/130g butternut squash
2 big handfuls rocket (approx. 50g)
60g pomegranate seeds
35g cubed feta/semi soft cheese
Oil and paprika to taste
Optional: a small handful of olives

Directions
-Preheat oven to 180C
-Peel and chop some squash into cubes and drizzle over some oil then sprinkle over paprika (as much as is to your liking) and place into the oven to roast for around 30mins
-Lay out the rest of the ingredients on a plate and add the squash when it’s done roasting (or leave it to cool if you prefer it to be at the same temp as the other food).
