This dinner can be made in under 15min, is well balanced, nutritious, 2/5 a day and all you need to give you a little boost after a hard day!
For those who may need more protein & are meat eaters, feel free to add some fried turkey mince etc.
I love this combo as you get all your macros: carbs from sweet potato, protein from beans/lentils and good fat from the hummus, plus the fat helps the vitamin A absorption from the potato and it’s packed with lots of fibre too!

Recipe (serves 2)
-2 large sweet potatoes
-1 carton plain beans/lentils
-120g hummus (I like the Tesco organic one & it’s quite easy to find nowadays)
-spices e.g paprika, chilli flakes, oregano, black pepper etc
optional: turkey/beef mince

Directions
Put on a pot of water to boil, while it’s heating up, chop the sweet potato into chunks then add them into the boiling water and reduce the heat slightly (this should take around 10min to cook)
After 5 mins, start to drain your beans and add these to the same pot or a different one if there’s no room and cook for approx 5mins. If using the mince option, start frying it up now.
Once the potato and beans are cooked, drain them, mash the potato and serve up with a generous dollop of hummus and your favourite spices to top
