This is an epically nutritious pasta dish (yes they can exist!) and is made even more so by the addition of the
moringa powder (very high in Vit K,
so do not use if on blood thinners/pregnant) which you can’t even taste due to the combination of the other ingredients. The avocado in this recipe gives a lovely creaminess which is something most of us associate with an indulgent pasta, so you feel like you’re being naughty but are actually being nourished!

A simple, classic treat with the option of the added twist of moringa* powder for an extra kick of nutrition for the health warriors (but trust me, you won’t taste it, I served these up to my family and they didn’t suspect a thing!).
*Do not use moringa if you’re pregnant-consult a doctor first
Even if you choose to leave out the moringa (in which case reduce the syrup to 1Tbspn) but make your own chocolate, this is still an awesome treat as the chocolate will then retain a lot of its goodness when compared to the heavily heated/processed varieties.

I love baobab (pronounced
bay-oh-bab) and after reading about the
#MakeBaobabFamous attempt, I really wanted to promote it so that African families can get a better income.
Incase you don’t know what baobab is I’ll briefly describe it here.
Baobab is a powdered fruit that grows in Africa which tastes sweet and citrusy. Personally I find it so versatile as I can use it in porridge or smoothies and one of my favourites is mixing it with coconut oil and lemon juice to make a lovely citrusy
baobab frostingThe biggest nutritional punch in this fruit is the Vitamin C and antioxidant capacity mainly found in the pulp.
Per 10g of baobab (depending on the brand/batch) it has approx. 28-37% of your RDI of vitamin C!! The leaves and other parts of the fruit contain other nutrients eg. magnesium and calcium but it is mainly the pulp that forms most powders.
http://www.tandfonline.com/doi/abs/10.1080/10408390701856330?journalCode=bfsn20I also think it’s a great ingredient that adds depth of flavour to food and increases diet variety, so I encourage anyone to consider consuming organic baobab powder & not to be afraid of it because of its funny name. Remember, the more we demand good, natural products from companies the more the supply will have to increase, making it easier in the future for healthy products to be more readily available, plus you’ll be helping African families get a
better income.

These are a great little snack and you can easily manipulate them to suit your own tastes e.g choose white chocolate chips with cranberries or use different fruit such as fresh cherries, gojis or raisins. This recipe is healthier than the traditional as it doesn’t use any refined biscuits, condensed milk and omits the heavily processed cherries, with the replacement ingredients being a lot “cleaner” and with less refined sugar.

A huge bonus to this pie is that as the ingredients are pretty much what you might have in the morning i.e. porridge oats topped with banana, nut butter and cacao nibs, you don’t need to feel guilty if you fancied eating it for breakfast!
Plus, the base is made from ground oats which give a really crumbly biscuit like texture when cooked (or for a raw recipe simply leave to set for a few hours in the fridge).

The use of the nutritional yeast (provides cheese flavour), beans, lemon, garlic and cashews makes this recipe a much more nutritional version of the classic but is still something you can get your teeth into, plus it’s vegan too!
Another bonus is that it can be made in under 20mins for a super quick meal.
