Minimal dishes required for this recipe AND it’s highly nutritious.
Normally I don’t make salads, they don’t interest me at all so even though I’m quite a healthy eater I just don’t eat them that much however, this salad is perfect for summer as the pomegranate seeds pop, giving a lovely juicy burst of flavour to the salad and the cheese balances out the acidic taste of the rocket. Perfect for the warmer weather, easy to make and it packs in so many good foods with bright colours and nutrition!

I couldn’t wait to make this recipe once I found lovely cherries at St Georges market, I had been craving a cherry choc combo for a while so reeeally enjoyed this, especially as the weather was lovely too. This is what I mean by enjoying a healthier meal without it needing to be celery or kale based. I looove yogurt and granola but find it hard to source good granola so instead I make it myself and I sweetened the dish naturally by adding cherries into my organic yogurt and only 1 tablespoon of maple for the batch of granola, boom! Healthy and tasty!
Plus I love that this cherry yogurt version has actualcherries in it rather than “cherry flavour”. It looks and tastes amazing, so you can easily impress your non healthy eating friends!

High in protein, fibre, green goodness, low in sugar with no refined nasties & made in under 10min!
This is a nutritional powerhouse of a meal. Each 50g of black bean noodles has 22g protein, 10g fibre and approx. 30% RDI iron (the absorption of which is boosted by the Vit C from the other ingredients) with only 7.5g carbs, that’s a seriously good nutritional “pasta” meal and that’s not even mentioning the nutritional goodness you get from the avocado, basil, peas and garlic! Plus this is 2/5 a day (3 if you use more noodles), you can’t get much better than that!

A taste of Mexico with the chilli, lime and yes even chocolatey flavour from the cacao which they actually add to chilli stews in Mexico!
One difference from most energy balls is that I used dried apricots and gojis in this recipe rather than dates & I think I’ve discovered my new fav snack as the apricots are delicious, plus they’re lower in sugar than dates (as are the gojis).
Sooooo many good ingredients are included in these balls and they taste awesome which is why they’re going to be a regular in my kitchen, plus no one else in my family likes spicy food so there’s no risk of them being eaten with the “cat” getting the blame!
Great for when you have the cold as the chilli in these will certainly clear your sinuses and the vitamin C content will keep your immune system in top shape.

This dinner can be made in under 15min, is well balanced, nutritious, 2/5 a day and all you need to give you a little boost after a hard day!
For those who may need more protein & are meat eaters, feel free to add some fried turkey mince etc.
I love this combo as you get all your macros: carbs from sweet potato, protein from beans/lentils and good fat from the hummus, plus the fat helps the vitamin A absorption from the potato and it’s packed with lots of fibre too!

Yes, you read that correctly. A chocolate pie with benefits, woop woop!
I didn’t even realise what I had made until after it was finished, then I marvelled at it (and proceeded to fill my face with it).
It’s so good that it even got the seal of approval from health food phobic family members!
