A healthier, grain free version of the classic PB & J!
How do you make a PB & J combo healthier? Well I used real food ingredients and I added extra protein into these cups to help with post workout recovery and to balance out the fat a little more.

A simple, homemade chia berry jelly/jam provides the sweet filling without using a refined sugar loaded jam. You’ll have some leftover as well to use the next day on whatever you like e.g. porridge, pancakes etc.

This one has been one of my go to meals on numerous occasions when I need a quick meal after a workout/busy day & which is also nourishing. I usually have half an avocado floating around the fridge anyway ready to be used up and I always have a packet of microwaveable lentils or quinoa in the cupboard for speedy meals like this.
If you don’t have any leftover turkey/chicken (or are vegetarian) then you could always poach or scramble up an egg pretty quickly, or just leave it out, there’s still a good dose of protein from the lentils.
Also a great lunch idea for the next day that won’t take up too much time from your evening, if your mixing the avocado in with the other ingredients for the next day then use the lemon dressing for the avo as it will stop it from browning.

This is a spin on the 5 min burger bun recipe I did a few weeks back.
I also use the recipe for breakfast too were I toast/heat the bun slightly and use it as a breakfast muffin with typical brekky toppings for a nutritious yet different way to start the day other than a bowl of cereal or smoothie.

OMG this is the best salad I’ve ever made!
Super tasty, super easy and you only need to use 1 bowl (besides your serving plates) meaning minimal washing up, yay!
I highly encourage you to do the simple sweet chilli sauce yourself, rather than buying one from the store as they’re full of refined sugar, this one however uses only 1 tablespoon of honey for 2 servings yet still has lots of flavour.

How is it so creamily guilt free I hear you ask? Well, it comes from frozen, blended banana & some fresh avocado. Now that may sound weird at first but trust me on this one, it works like a charm and you’re getting some great fibre, good fats & potassium in there too which are great for the heart.
Plus the addition of pure cacao powder and cacao nibs means a chocolate flavour without any added sugar, meaning a truly guilt free treat, woohoo! (more…)
