I loved how this recipe turned out so much that I ate it so fast I nearly choked!
A great way to use up leftover cooked squash that doesn’t involve chucking it into a salad.

A paleo, grain free, low carb burger bun
As the bulk of the bun is made up of squash and coconut flour it’s much lower in carbs than the traditional version, although I do highly recommend pairing a good fat e.g. avocado or a sauce with the bun and burger as coconut flour (especially the de-fatted kind which I used) can be a little dry, but no less delicious! I love the creaminess of this recipe but it was made even better when I decided to add a bit of protein into the dish, I chose a mix of tahini (ground sesame seeds), nut butter and protein powder which provides protein but also good fat in there too!

This mix was so delicious, that I’m going to un-ashamedly admit that once I had used all of the mix up I licked the pot clean, there wasn’t a speck of the mixture left on it!
You really don’t need much sweetener either as the orange zest and almond butter give so much flavour, which makes these beauties fantastically tasty without containing loads of sugar, woohoo!
I got a new blender recently which is an absolute beast, I’m loving it and used it to make my own organic almond butter which I used in this recipe. I can’t wait to experiment with other nut butter combos/flavours and will share any good ones on here once created. 😁

I adapted this recipe from This Morning when Gino cooked his version of a cottage pie. I used turkey mince as I’m not a fan of red meat and used pumpkin (you can use squash too) instead of sweet potato which makes it less stodgy and because I still had 2 entire pumpkins leftover from Halloween lol! But feel free to use sweet potato if you like or 50/50.

I loved making this recipe as I’m always using chickpeas in various ways especially consuming it in a garlic hummus so I wanted to mix it up a bit hence this recipe with a difference! Haricot beans are the type used in the famous branded baked beans but you can get them plain and use them as you would chickpeas in a normal recipe.
Other beans should work too such as barlotti/canellini etc, beans are fantastic foods to add into your daily meals, they’re such good sources of protein, fibre, magnesium and folate (B vitamin).

The base on these mini pies is delicious! It’s a mix of dried fruit, nuts, seeds and pumpkin spice, very flavourful without being too rich.
The pumpkin I used for this turned out to have paler flesh than others so mine isn’t overly orange meaning they didn’t look too pretty but they taste pretty fricking good! Plus it’s a great way to use up extra pumpkin flesh once you’re done with your carving.
You can use bun cases to make separate small pies or just smoosh it all together in one big tin and then cut into slices
