This one has been one of my go to meals on numerous occasions when I need a quick meal after a workout/busy day & which is also nourishing. I usually have half an avocado floating around the fridge anyway ready to be used up and I always have a packet of microwaveable lentils or quinoa in the cupboard for speedy meals like this.

If you don’t have any leftover turkey/chicken (or are vegetarian) then you could always poach or scramble up an egg pretty quickly, or just leave it out, there’s still a good dose of protein from the lentils.

Also a great lunch idea for the next day that won’t take up too much time from your evening, if your mixing the avocado in with the other ingredients for the next day then use the lemon dressing for the avo as it will stop it from browning.

Speedy protein puy lentil bowl with chilli lemon dressing

Recipe (serves 2)

-1 packet puy lentils (microwavable kind)
-10 sundried part rehydrated tomatoes
-1 large ripe avocado
-2 thick (approx. 125g) slices precooked turkey/chicken or eggs
Dressing
-1 Tbspn fresh lemon juice
-1& ½ Tbspn neutral tasting oil e.g. avocado, rapeseed, plain olive oil
-Chilli powder & smoked paprika to taste
Directions
Microwave puy lentils according to pack
Whilst these heat, whisk up your dressing to your taste
Drizzle this over the lentils once cooked (or avocado if keeping it for the next day)
Chop the tomatoes, turkey & avocado into small chunks and mix into the lentils
