Healthier beetroot red velvet brownies

These red velvet beetroot brownies are so fudgy when you leave them until the next day, which I love. They have a naturally sweet but rich flavour, and definitely don’t taste of beetroot thanks to the dates! Plus I’ve added an almond butter frosting but you could also use a cream cheese of choice or use a thick coconut yogurt mixed with maple syrup and beet juice etc.
They’re vegan, refined sugar free and can easily be gluten free too so you can make these for any kind of valentine you like.

Omega 3 & magnesium rich brownie energy balls

Does what it says on the tin! These energy balls are not only a great, natural source of energy but also use ingredients high in omega 3 fats and magnesium, so you can nourish yourself while feeding a craving.

For the healthy fats/omegas I used ingredients such as walnuts, chia and hemp protein, you can also add shelled hemp seeds as a topping too if you like plus dark chocolate which not many people know can be a good source of magnesium. Brands will differ due to which one you choose & also how dark regarding the chocolate coating. A basic cacao powder will be high and the one I used per 100g has around 166% of RDA magnesium (thought the RDA will differ between men & women). A few squares of 85% dark choc can be a good portion of your RDA ticked off too so I used both in this recipe. Chia seeds & cashews also contain magnesium.

Healthy hazelnut chocolate truffles

These homemade, healthier versions of Ferrero Rocher are a great treat to have handy in your fridge for when you fancy something indulgent and need a choccy hit fast!

They use only 5 main ingredients, can be refined sugar free (I used a 70% chocolate brand that uses coconut sugar) and vegan friendly plus contain fiber meaning a slower energy release too! Your body will thank you for this one.

Rich, sugar free, chocolate frosting!

I’ve wanted to make a good, sugar free frosting for cakes for a while now, I have finally nailed one I’m happy with. This rich, peanut butter chocolate frosting is amazing, creamy and still indulgent even though it’s refined sugar free!

I love adding this to my cakes and it’s enough for 5/6 slices depending on size. I also tested this on other people & they loved it!

Healthier chocolate banana bread!

I know banana bread was all the rage during lockdown and it always is because we very often have ripe bananas to use up in a short period of time so I did just that but put my own healthy twist on this one & also added some cacao powder for chocolate hit but is still healthy enough to have for breakfast!

This can also be gluten free by using GF flour and also vegan too! You can adjust the sweetness but I like to keep it low, letting the ripe bananas do most of the work here.
