No bake, rich, dark chocolate torte made with natural ingredients and can be refined sugar, gluten & dairy free!
Such an easy dessert with nutrition, fiber and rich chocolate goodness, plus you can make this a head of time and bring to room temp before serving. It is also a great option for anyone with allergies as it is easy to make gluten or dairy free and you can decorate this however you like and tailor the flavour of the choc however you choose very easily so it’s quite versatile too.
-10g cacao powder
-100g dates/raisins, soaked
-as needed: 1 Tbsp water
-95g dark chocolate, chopped (I like Ombar or Green & Blacks)
-60g coconut fat from a can of coconut milk (white solid stuff at top)
-25g to 40g liquid sweetener e.g Sweet freedom (40g) or else maple/honey (adjust to taste)
optional: 1 tsp orange extract
optional: chopped nuts/freeze dried berries etc for decoration
Serving suggestion: I prefer this at room temp because it has a slight ganache texture then and I also recommend sharp tart berries to contrast the rich choc such as raspberries or blackberries.
-Start by blitzing the nuts and oats in a food processor
-Add the cacao powder and blitz again then add the wet ingredients and blend until it comes together and sticks together when pressed
-Press into a lined circular tin then refrigerate
-Finely chop or else blend the chocolate until its broken down into small bits
-Melt the coconut fat, water and liquid sweetener together then when melted, add the choc (and extract if using| and let sit for 1 minute & turn off the heat, the residual heat should melt this as you stir it slowly
-Once melted together taste to make sure it is sweet enough and adjust accordingly then pour over the base (add decoration here if desired) and then let cool for 5min before setting into fridge for 90mins or more until set
