This recipe is simple, tasty and quick. Let the tomatoes roast & pasta cook while you grab the other ingredients and then all you need to do is blend and serve up. Delicious, homemade, full of goodness pasta sauce with pizza flavours thanks to the cheese, basil & tomato combo.

Nutritious pizza flavoured sauce
You also get lovely lycopene (powerful antioxidant) nutrition from the cooked tomatoes here (better absorbed from cooked instead of raw toms) and at least 1/5 day, if not more, depending on what kind of pasta/spaghetti noodles you use. I’ve used carrot and courgette noodles in the past and also regular spelt pasta, they all taste great!

A creamy chocolate “notella” pudding that’s just as tasty as a nutella pudding but healthier, nourishing and counts as 1/5 a day!

How I choose to nourish, not punish
It’s recipes like this that make it really easy for me to stick to a healthy, nutritious eating pattern and to resist processed snacks/desserts, after all, it’s sweet, creamy, chocolate flavoured and rich, so how could I feel denied?
When I eat food like this I remember all the good things about the ingredients and how they’re benefiting my body:
*good fats for soft skin and heart health
*antioxidants for overall health
*fibre from the avocado and nuts for a good digestive system and slow energy release
*natural sweetness

I love this recipe, it’s so simple with a naturally nourishing twist on the traditional fish & chips ingredients and leaves you feeling good afterwards because you know you’ve just nourished your body 💗

Healthy herbed salmon and squash chips
The fish I chose to use is wild salmon, such a great food with amazing benefits for the heart, a great source of vitamin D and so tasty when paired with the herbs and lemon. For the chips, I used squash and cut it into typical chip shapes but you can of course also use sweet potato if you like or stick with butternut squash for a less stodgy version but still getting some great beta carotene (a form of vit A) in there. Ok, you may be wondering what a “loaf-cake” is, well, it’s what I’ve created here as it looks like a loaf but is softer and mildly sweet so tastes a bit like a cake, therefore, loaf-cake! 😃
For this recipe I’ve used a mix of fat reduced almond and coconut flour meaning it is grain free.
To get the best results, i.e. a thick, slightly sticky texture, try to use a concentrated fruit puree like this one. It was very thick in consistency but this provides the stickiness, if you can’t find anything like this then I’ve also successfully used 1 apple, boiled for 10mins then pureed or some honey/jam. I like Meridian’s jams as they don’t have any refined sugar and are sweetened solely by fruit, you can find these in Holland & Barrett or big supermarkets.

Before you think it, kale is not on the list, I purposely left it out as I wanted to highlight other foods that I felt people wouldn’t normally think of or expect. These are all easily available in all shops and at very cheap prices.
There are also many, many more that I could add to this list but I decided to keep it short so that I didn’t bore anyone with too many long explanations, so remember that there are others out there and that eating a varied diet is a great idea.
This post is also very similar to another one I did called Everyday superfoods so I suppose you could see this as a part 2 in a way, I hope you find the info in both helpful.
