These homemade, healthier versions of Ferrero Rocher are a great treat to have handy in your fridge for when you fancy something indulgent and need a choccy hit fast!

They use only 5 main ingredients, can be refined sugar free (I used a 70% chocolate brand that uses coconut sugar) and vegan friendly plus contain fiber meaning a slower energy release too! Your body will thank you for this one.

Recipe (makes 6 truffles)
-55g dates, de-seeded and soaked in water for 15min minimum
-35g ground hazelnuts (or use roasted whole and grind them in a food processor first with the oats)
-10g oat flour (or grind oats in a blender first)
-10g cacao powder
-45g dark chocolate I used 70%
Optional: chopped roasted hazelnuts for topping or you can pop a whole/half a hazelnut in the middle of each truffle before coating it in chocolate

Directions
-If not already ground, blend oats and hazelnuts (except some for topping) in a food processor then set aside
-Drain & add the soaked dates and cacao powder and blend until smooth then add in the oats and hazelnuts and blend again until a dough/ball begins to form, set in the fridge until the mix firms up, at least 20/30mins
-Once firm enough to roll, take generous teaspoons of the mix and roll into balls and set onto parchment
-Melt the chocolate and roll the balls one at a time into the choc until coated then add chopped nuts if desired or you can add them to the melted chocolate then roll the balls in this so they’re incorporated into the coating
Set the truffles into the fridge until the choc coating has firmed up
