The beautiful colour from the pomegranate seeds makes this meal look so pretty, it also gives it a natural sweetness which pairs really well with the creaminess of the coconut butter which is thicker and creamier than coconut oil (as it contains some coconut flesh & therefore fibre, whereas coconut oil is just the fat), so I recommend this but the oil will do fine too if you only have that.
Recipe- serves 1
-45g oats (use GF as needed)
-150ml milk (any kind)
-1 tspn coconut butter or coconut oil
-60g to 80g pomegranate seeds
optional: a sprinkle of shredded coconut to top

Directions
Add all the ingredients to a pot and cook on a medium heat until the coconut butter begins to melt then turn it up and cook until you reach your desired consistency, I like my porridge thick!
