If you’re familiar with my blog then you’ll know I’m a big fan of sneaking veg into recipes anytime I can, so you shouldn’t be surprised by the sound of a chickpea pudding, this one really works thanks to the strong flavours of PB & J, which is a classic itself but is given a healthy makeover in this recipe.

For the “jelly” in this recipe I used a fruit only sweetened jam and combined it with some high oleic peanut butter, which is a type of peanut that has a higher monounsaturated fat profile (similar to avocados!) which is healthier for the heart and also means they’re more stable during heating and won’t go rancid as quickly, plus it tastes amazing and really helps make the chickpeas taste delicious too!
This is such a nourishing, yummy recipe that although I called it a “pudding” I often have it for breakfast, hehehe, gives you something to get out of bed for!

What is a brookie I hear you ask?
It’s a cross between a brownie and a cookie, but my recipe doesn’t require any flour which produces a soft, moist centre and rich chocolatey taste PLUS you only need 3 ingredients which you probably already have in your cupboards.
No oil
No refined sugar
No flour or grains
No blender required
Which all means no excuses not to make these!

Whenever the cravings hit but you’ve no treats stashed away and it’s too late to go to the shops, whip up a batch of these soft, chocolatey treats, they can be made so easily and are practically guilt free! No weird ingredients, full of fibre and any leftovers make a great lunchbox addition.

Oh my word, these are soft chocolatey delicious balls of skin loving goodness!
No but really, who doesn’t like sweet potato or almond butter or chocolate, so how about all three together with some added hemp protein making them a great balanced and super yummy snack for pre or post workout and also highly nourishing for your skin too.

Skin food
These balls are also great for skin as they contain vitamin A (from sweet potato) and vitamin E (from almond butter), powerful antioxidants from the cacao and healthy fats from the almonds and hemp protein. Plus, they pack a good fibre punch which helps keep things moving which is also good for skin health as everything is regularly being cleared out…..
Overall these are some seriously nourishing balls!

This is a proper brekkie indulgence which will have you jumping out of bed in the morning.
Who doesn’t want something chocolatey to kick off their day? Combine it with something creamy that also nourishes you AND adds a hefty energising dose of matcha to get you going in the mornings and this will soon be one of your favourite ways to launch into the day.

This has got to be one of my all time favourite recipes ever!!
These bars have such a soft, fudgey texture with a lovely taste AND contain five, yes FIVE different fruit and veg in them meaning they aren’t just delicious but absolutely packed with the good stuff!


These are mostly made of fruit or veg meaning you’re properly nourishing your body with every bite which makes it hard to stop at one, which you’ll soon find out for yourself!
These are so nourishing that although they look like a very rich dessert, they’re actually more nutritious than what most people eat for breakfast plus they’re:
-grain free/flourless
-high in fibre and protein
-contain good fats that help with the feeling of fullness
-use accessible, affordable ingredients

For a similar recipe that you can make if you haven’t got the black beans in your kitchen at the time is my bean blondie recipe. I took this recipe one step further by adding a bottom brownie layer and trying to create a denser “cookie dough” layer on top and then cramming as much goodness as I could into the recipe to make each bar something that nourishes not only your body but soul too because we all need to treat ourselves now and again.

I’ve been loving the combination lately of cashew butter and some sweetness, it’s absolutely amazing! Plus as you’ll know if you’ve glanced at any of my recipes, I love to make my own chocolate treats so what better way or time to do it than Easter and by making a healthier version of a classic Easter treat -homemade creme egg!!

I’ve also included a sugar free option to sweeten the fillings with and you can use a very dark/diabetic friendly chocolate meaning they can be tailored for anyone who needs a low sugar option, although even with the liquid sweeteners it’s still low sugar overall per egg with a much richer taste meaning you eat less of them while still getting your chocolate creamy centred hit!
Tip: I used silicon egg moulds that I found in the pound store

Dark chocolate oozey goodness!
These are also a great thing to make with the kids to keep them occupied or for homemade Easter gifts and you could tailor them if needed, for example, add some orange oil extract for a choc orange flavour or colour the centre with something pink for a pop of colour (of course it would no longer resemble a creme egg, but would still look just as pretty).
