Make this soft, sweet berry banana bread for breakfast when you’ve a morning with some free time (not one where you need to rush out the door as it needs time to cook) or else use it as a single serving sweet treat which means you don’t have to make a big batch of something which is then lying around tempting you for the rest of the week.
This also counts as 1/5 day, is loaded with fibre and you can add some protein to this recipe to help achieve a feeling of fullness.
-1 medium banana
-1 Tbsp (15g) nut butter
-2 Tbsp (30ml) milk of choice
-3 Tbsp (30g) buckwheat flour
-sprinkling of blueberries
optional:1 Tbsp (10g) plain protein powder (you may need a splash more milk if using a high fibre plant based protein)
optional: dash of cinnamon/sprinkle of cacao nibs
1-Preheat oven to 180C and lightly oil a small oven safe bowl
2-In the oven safe bowl, mash the banana and nut butter together then stir in the milk followed by the dry ingredients
3-Put the bowl in the heated oven and cook for 20mins on the top shelf then remove and allow to cool for 1 minute before tucking in (be careful with the bowl as it’ll be roasting!)
