These clean, plant based protein bars are a lovely little way to boost your protein intake and easy to make with wholefood, real ingredients and using protein powders that you like and trust. I personally won’t use ones with added sucralose etc and most protein bars also have a horrendous list of ingredients or lots of prebiotics that not everyone can tolerate well so you’ve no choice really but to make your own.
I used a vanilla flavour plant protein powder and hazelnuts for flavour but these are easy to adjust to whatever taste you like so feel free to play about with your bars.
Recipe (makes 3/4 bars depending on the size you cut)
-25g oat flour (grind oats in a blender)
-50g protein powder, I used a plant based one, whey wont work as it’s not as absorbent
-50g runny peanut butter
-12g honey/maple/date syrup (increase to 15g if you want these sweeter)
-1/2 tsp coconut oil melted
-125ml-150ml warm water (the amount may differ depending on each type/brand of protein so adjust as needed, start with 125ml, if its cold it’ll freeze up the coconut oil so best to use warm or melt it together with the oil)
-15g ground hazelnuts/almonds (optional addition but I do recommend some chopped hazelnuts/nuts for topping
-45g chocolate of choice for topping
Optional: 1/4 to 1/3 tsp turmeric for colour and anti-inflammatory goodness /vanilla extract/paste
Adjust: swap the ground hazelnuts for tigernut flour if you want a prebiotic boost
Directions
-melt the coconut oil and water together then add to a bowl with the peanut butter and honey/maple and stir
-add in the dry ingredient, adjust with more liquid as needed 1 Tbsp at a time
-stir well, then press into a lined baking tin/loaf tin and set into the fridge
-melt the chocolate and pour onto the top and sprinkle on nuts/topping of choice
-set into fridge to firm up then slice
