Sometimes you just want a snack to tide you over in between meals or maybe just something small with a bit of fruit for those of you who don’t have a huge appetite at breakfast but want to get more goodness into your day. Then these are a great way to do that, plus, no added sugar!
I used a plant protein here to balance out the carbs but it also makes a good post exercise snack until you can get home/to work to make a proper breakfast. These cookies are also pretty flexible in terms of adding different ingredients to make them taste they way you want. I like coconut and berries as I used a white choc coconut flavour protein but you can do whatever you like such as spices e,g cinnamon/ginger or some chopped dark chocolate!
-30g plant protein, mine was flavoured & sweetened (whey won’t work as it’s less absorbent)
-1 medium ripe, brown banana, broken into bits
-5g peanut butter
optional: shredded coconut, maca powder, matcha powder, spices, dark choc etc
IF needed: 1 Tbsp of water, you might not need this depending on exact weight of banana flesh & your brand of protein as some are more absorbent than others
Pre-heat oven to 150c fan
Simply chuck the dry ingredients into a blender and whiz for a few seconds until roughly blended then add the wet ingredients and blend until it comes together. Only add the water if needed!
Leave the mix to sit and thicken for about 10mins.
Scoop out onto baking paper with a spoon and add toppings if you like then bake for 10-12 mins or until lightly golden at edges, keep a close eye on them as they cook fast!
