This recipe is such a great mix of complex carbs, protein and healthy fats plus it’s sugar free. The coconut & berries contribute to your 5 a day and these along with the oats pack a decent fibre punch, combine this with the antioxidants from the dark choc/cacao and you’re all set with a super healthy, well balanced breakfast.

What’s even better is that you can have this made the night before and ready to go as a quick breakfast the next morning after a workout as a good way to refuel and re-nourish your body!

Plant protein powders
You can get loads of plant based proteins online or in health food shops, I like pea protein or a blend of pea, hemp & seeds etc. Try to get ones with stevia/thaumatin and not with artificial sucralose or other nasty ingredients. By using plant based stevia for flavour and sweetness the proteins taste really good and mean less sugar/added sweetness is needed in recipes.
I tend to shop my proteins from Holland & Barrett or Amazon but you can also find them in shops like Boots and Superdrug too.

Plant protein bounty overnight oats Breakfast vegan

Recipe (serves 1)
-35g oats (I used White’s jumbo as they digest slower for longer energy+fullness)
-25g flavoured plant protein (I used Bulk powders White choc+coconut stevia blend)
-4g cacao powder
-2Tbsp desiccated coconut
-150ml water
Toppings: i like topping with coconut yogurt, scrappings of dark choc or cocoa nibs and berries but you can choose whatever you like
Note: I didn’t require any added sweetness as the flavoured protein was enough for me but feel free to adjust to your own tastes

Directions
Simply mix all of the base ingredients together in a bowl and refrigerate overnight, add more water if you want a thinner consistency. The next morning top with whatever you like and enjoy. You can also heat this up in the microwave for a few seconds before topping if you want it slightly warm.
