Healthy can be yummy too
This is one of those recipes I’d love for people to try when they say that healthy food is too complicated or boring or bland.
Healthy food doesn’t have to equal deprivation. You can still have your favourite things, just made with more nourishing ingredients that feed your body better.

These can be served with anything you like and used at whichever meal of the day you prefer. I like to toast them and top with avocado and some spices or else with Violife plant based cheese spread and sun-dried tomatoes for a savoury breakfast.

Recipe (makes 4 bagels)
Note: you’ll need a donut mould to achieve the correct shape, you can easily get these on amazon for a few pounds.
-2 medium eggs
-60ml (1/4 cup) water
-1/2 tsp Apple Cider vinegar/lemon juice
-21g fat reduced coconut flour (I used Groovy foods)
-30g ground flaxseed*
-1 tsp (5g) tapioca flour/starch
-1/2 tsp baking powder
optional: 1 scoop collagen
*You can sub 10g of flax for psyllium husk

Directions
Preheat the oven to 180c fan
Mix together the wet ingredients first in a large bowl then add in the dry ingredients.
Add the mix to a donut mould (mine were silicon so didn’t need oil but yours might)
Bake at 180c for 20-22min, enjoy!
