Anyone fancy healthy, flourless blondies? Did I mention that they’re made mostly of beans?
As they’re made with white beans to give them bulk you don’t need flour and it makes them higher in fibre and protein but also lower in calories than your typical blondies. I’ve also added some turmeric which not only helps with colour but adds some anti inflammatory goodness too.
These are also fairly light and because of their decent protein, fibre and healthy fat content they make a good pre-workout snack for anyone who may be heading to the gym after work but hasn’t eaten in a while.

Recipe (makes 6)
-1 can white beans (240g drained)
-1 egg
-½ tsp vanilla
-3 Tbsp liquid sweetener (honey, maple etc)
-1/3 cup (32g) ground almonds
-1/2 tsp baking powder OR 1/8 tsp baking soda
-1/4 cup (33g) dark choc chips
-½ tsp turmeric
Update: you can sub turmeric for 3/4 tsp ginger powder if you don’t like/have turmeric & as it’s flavour isn’t as strong you can reduce the honey/maple to approx 2 to 2 & 1/2 Tbsp.
Directions
1- Preheat your oven to 160c
2- Drain and rinse your tin of beans then add them along with the egg, vanilla and sweetener to a food processor and blend until smooth.
3- Add the baking baking powder, turmeric and almonds and pulse until evenly combined then stir through your choc chips and spread the mix into a small lined/greased rectangular dish and bake on the middle rack in the oven for 35mins then allow to cool before slicing. For fan oven cook at 150c for 25mins.
