This quick meal is not only tasty and cheap to make but uber healthy too thanks to the 6 different fruit/veg meaning it’s packed full of plant based goodness. There’s way too much to mention in detail so I’m just going to quickly summarise the main benefits below:

Quick, cheap AND healthy, you have no excuse not to try this!
An optional but added bonus is the turmeric at the end which can help with digestion and is highly anti inflammatory especially as its absorption is greatly increased by the addition of black pepper.

20 min 1 pot veg packed lentil, cauliflower and mango dhal Dinner Grainfree Lunch vegan

Recipe (makes 3 portions)
-400g carton chopped tomatoes
-300ml stock
-1/2 a head of cauliflower
-1 can lentils (drained and rinsed)
-3 large handfuls peas (approx. 120g)
-1 small fresh mango, diced
-2 to 3 tspn of your favourite curry powder (adjust to taste)
-Generous pinch black pepper
-2 sliced rings of red onion
-1 inch piece of ginger (finely grated)
-1 & ½ Tbspn oil for frying
Optional: 1/3 tspn turmeric per bowl (once served)

Directions
Note: You’ll need a big pot to fit everything in
1- Chop the onion and fry in 1/2 Tbsp oil, while this cooks start chopping the cauliflower into bite size bits
2- Add more oil to the pot then add the cauliflower and your chosen curry powder (I used a mix of tikka and medium heat curry powder) and give everything a good stir, let this cook for around 3-4 mins with an occasional stir
3- Add the rest of the ingredients EXCEPT the mango and turmeric then bring to a boil before reducing to a simmer for 10mins
4- While this cooks prep the mango, then when the 10mins is up, take the pot off the heat, stir in the mango* and serve up with some additional turmeric in each bowl if desired
*I like to add the mango in last so as to preserve the vit C
