Such a delicious way to start your day, with juicy berries, creamy almond butter and you also get some protein and wholegrains in there too, this will set you up for a great day!
Strawberry almond butter pancakes Breakfast Lunch


Recipe- makes 3 small pancakes

-1 whole large egg & 1 egg white
-1 Tbspn almond butter (mine was quite runny so you may need to add water to thin yours out)
-Aprrox 2 & ½ Tbspn wholemeal flour
-A dash of cinnamon
-1/4 tsp baking powder
-Approx 150g strawberries, sliced
-oil for frying
Directions
Note: I add the berries once ive added the mix to the pan as they hold their shape better but you can add them into the mix before frying if desired

Whisk together the eggs and almond butter then stir in the flour, baking powder and cinnamon
Chop the strawberries, leaving some aside for a topping then heat a frying pan
Dollop the mix into the pan creating whatever sized pancakes you like, then as they’re cooking add the berries ontop
Flip over once cooked on one side then serve up with the remaining berries and toppings of your choice
