Move over kale there’s a new crisp in town…..seaweed! Trust me, it doesn’t taste like fish and you can flavour them with whatever you like, plus they cook superfast and contain lots of nutrition such as iodine (update: and B12), which can be hard for some people to get.

The sauce uses tomato puree & spices instead of the standard ketchup, so it remains super tasty but also that little bit better for you. Put this sauce on anything you like, I chose to try it with my new black bean noodles, salmon and peas, you could use any pasta & veg you like or simply keep it for the seaweed crisps.

Seaweed crisps (serves 1)
1 sheet of seaweed
3/4 Tbspn oil
1 tspn water
½ tspn garlic powder
Pinch of cayenne pepper
 
Sauce
1 Tbspn homemade or good quality organic mayo
1 heaped Tbspn tomato puree
1/2 tspn paprika powder
1/4 tspn cayenne pepper

Directions
Preheat your oven to 150C then tear 1 sheet of seaweed into 1cm strips then tear these in half
Mix together the oil, water (this really helps them crisp up), garlic powder and some cayenne pepper or whatever spices you choose
Brush this mix onto each side of the seaweed strips then bake at 150C for approx. 10mins or until really crisp with a nice snap

 

For the sauce, mix the mayo, tomato puree, paprika powder and a pinch of cayenne pepper if you like your food hot!
