Healthy blueberry lemon shortcake bites/energy balls |
This recipe is easy to make, quick to whip up and doesn’t involve the use of dates meaning its lower in sugar than similar recipes. Plus I love the use of chia seeds which means you’re getting some good omega 3 fats in there too!
These bites taste even better when rolled in baobab powder which gives an extra zingy flavour as well as an added dose of vitamin C, however you can always leave this out if you do not have it but I highly recommend it as it really compliments this recipe (without it there’s no zing) and is a great way to increase your vit C intake.
Gluten, dairy, refined sugar free & vegan- enjoy!
-100g cashews
-90g oats
-3 Tbspn chia seeds
-Juice 1/3 of a lemon
-Zest of 1 &1/2 lemons
-1 tspn regular vanilla powder/extract or 1/8 tsp pure ground vanilla powder (add more if you’re use to the taste)
-Baobab powder for rolling
Tip this out into a bowl, then blend the blueberries, lemon zest and juice together until smooth then add back in the dry ingredients and blend for approx. 5 seconds until the mix forms a ball
Leave this mix in the blender for around 25mins to set as the oats and chia seeds absorb some moisture, this makes it easier to roll into balls
Take out teaspoon amounts of the mix and roll into balls then into the baobab powder
