I had this one for breakfast as I had some hummus to use up which makes a difference to my usual porridge breaky but it’s great for any time of the day.
The lemon, chilli and garlic hummus really gives flavour to this dish as the quinoa and green veg are quite plain.
This dish is also super easy to pull together meaning you’re not in the kitchen for ages but still get plenty of goodness into you, win!

Recipe (serves 1)
-Approx 1/3 cup of quinoa and 1 cup water (I added some almond milk to add more flavour)
-1/2 cup fresh/frozen peas
-small handful spinach
-juice half a lemon
-cayenne pepper (adjust to taste)
-60g hummus

Directions

-Bring the quinoa to a boil then reduce the heat slightly and cook for about 10-12 minutes then add the peas if you’re using frozen ones and cook for another 4 minutes then add the spinach and let it wilt slightly, approx 1 min
-Remove the quinoa from the heat once all the liquid has been absorbed and its fluffy
-Serve up then squeeze over the lemon juice, add the hummus with a sprinkling of cayenne and stir it all through.
