A small batch of healthy oat cookies for when you want a fresh small batch (cus let’s face it fresh is best) but you don’t want to spend lots of ingredients on a big batch or the temptation for days after, then these are a good option.
Made with healthy high fiber ingredients plus some protein too and you can add dark chocolate as well, it’s very easy to customise them to your needs.
Recipe (makes 3)
-20g oats
-15g plant protein (can sub for flour & adjust the sweetness)
-1/8 tsp baking powder
-1 Tbspn coconut sugar
-9g coconut oil/butter
-7g peanut butter/or other nut butter
-30ml water/milk of choice
optional: spices, choc chips, dried fruit
Note: depending on your brand of protein powder you may need an extra teaspoon of water/liquid
Directions
-Pre-heat the oven to 140c fan
Mix together the dry ingredients, melt the oil and other wet ingredients together then add this to the dry mix and stir. Shape into 3 small cookies
-Bake for 9-10 mins
