This super healthy, high fiber matcha banana bread with dark chocolate chunks takes a normal banana bread to the next level with a health boost!
Matcha is green tea powder which some people may not be a fan of normally but it’s so good for you so sneaking it in where you can is highly beneficial. For an overview of matcha/green tea benefits see my old post here.
I have also added some plant protein to my version to balance out the macros but you can also stick to wholemeal flour if you prefer. I absolutely loved making this recipe multiple times over the past few weeks as when I do, I have breakfast sorted for a 3 days and it’s lovely slathered in peanut butter!
Recipe
-80g wholemeal flour
-50g vanilla plant protein powder or use more flour
-25g ground almonds
-2 large ripe bananas, mashed well
-1 egg sub chia egg for vegan version
-1 Tbsp oil
-120ml water/milk of choice
-1 generous Tbsp coconut sugar
-1/2 Tbsp matcha powder (organic preferably)
-1 tsp baking powder and 1/3 tsp baking soda
-30g dark chocolate chopped
Optional: nuts for topping the loaf, I like walnuts
Directions
-Pre-heat the oven to 170c fan
-Mix together the wet ingredients, if you like a smooth batter then blend the bananas with the milk and then add the dry ingredients and mix well then stir through the dark choc if using
-Add to a lined loaf tin and top with nuts, bake for 38-45 mins until a knife comes out clean, you can also cover the top with foil for the first 15min so the top doesn’t brown too much before the middle is cooked
-Allow to cool before slicing and serve with nut butter
