So this recipe is exactly what it says on the tin. Protein powder (plant version) mixed with crumbled up cookie/biscuit and shaped in a cupcake tin then topped with chocolate.
You can adapt this with whatever you like, some suggestions I got on my insta stories were raisins or popping a berry in the middle or on top etc.

Recipe (makes 4/5 cups)
-40g ground almonds
-12g tigernut flour or more almonds
-20g plant protein (mine was vanilla flavour)
-5g melted coconut oil
-15g runny honey/maple
-45 ml water
-35/40g biscuits/cookies bashed up (I like Damngood UK use code Siobhan20 for a discount)
Topping
-35g dark choc + 1 tsp oil which helps it melt smoother
Adapt: sprinkle of freeze dried berries or hemp seeds on top of choc or raisins in the base

Directions
Simply mix together all the dry ingredients then add the wet and press into lined muffin tins/paper bun cases then set into the fridge to firm up for 1 hour or you can bake these for a firmer crumbly biscuit like base for 6mins at 120C fan.
Once the base is done just melt your chocolate and spread on top then allow to firm up before eating. Store leftovers in the fridge.
